Ingredients
- 2 cups cassava flour
- 1 cup tapioca flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon sea salt
- 2 tablespoons coconut sugar (optional for a slightly sweet taste)
- 2 large eggs
- 3/4 cup unsweetened almond milk (or any milk of your choice)
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon apple cider vinegar
- Sesame seeds or poppy seeds for topping (optional)
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together cassava flour, tapioca flour, baking powder, sea salt, and coconut sugar (if using).
- Combine Wet Ingredients: In another bowl, whisk together eggs, almond milk, olive oil, and apple cider vinegar.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until well combined. The dough will be thick and sticky.
- Shape Bagels: Divide the dough into 6 equal portions. Wet your hands slightly to prevent sticking, then shape each portion into a round bagel shape. Place them on the prepared baking sheet.
- Optional Toppings: If you like, brush the tops of the bagels with a little beaten egg and sprinkle sesame seeds or poppy seeds on top.
- Bake: Bake in the preheated oven for about 25-30 minutes, or until the bagels are golden brown and cooked through.
- Cool: Allow the bagels to cool on a wire rack before slicing.
